Comfort Treats

Rain, rain {and cold temps} go away!  What happened to Spring?  As soon as I acknowledged her, Spring went on vacation...probably somewhere warm.  Ugh!  With hopes of warm sunshine coming soon, all you can do to survive these ugly winter-ish blues is to stay comfy. 
Today these arrived.  Super soft pillows for your tootsies.  Can't wait to have them on with a glass of red tonight.  Bundle up...I will be wishing for warm weather!

¡Ay, caramba!

Ooh la la Papi! 
With all this warm weather talk, I needed to find something delicious to go with my springtime margaritas.  This blackened fish taco recipe from Cooking Light is absolutely to DIE for.  Fresh, spicy, and {ahem} healthy, I have made this recipe twice in the past week.  The sour cream and cilantro sauce is amaze-a-licious!  Try substituting thin sliced chicken breast for the fish.  I've even tried it with sirloin!

Blackened Tilapia Baja Tacos
Ingredients

1/4 cup reduced-fat sour cream

2 tablespoons chopped fresh cilantro

2 tablespoons fresh lime juice

1 jalapeño pepper, seeded and chopped

1 cup thinly sliced white onion

1 1/2 teaspoons paprika

1 1/2 teaspoons brown sugar

1 teaspoon dried oregano

3/4 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon ground red pepper

4 (6-ounce) tilapia fillets

1 tablespoon canola oil

8 (6-inch) corn tortillas

1/2 ripe peeled avocado, thinly sliced

4 lime wedges

Preparation

1. Combine first 4 ingredients in a food processor; process until smooth. Combine jalapeño sauce and onion in a small bowl.

2. Combine paprika and next 6 ingredients (through ground red pepper); sprinkle evenly over fish. Heat oil in a large cast-iron skillet over medium-high heat. Add fish to pan; cook 3 minutes on each side or until desired degree of doneness.

3. Warm tortillas according to package directions. Divide fish, onion mixture, and avocado evenly among tortillas. Serve with lime wedges.

Salut Spring!

Finally the winter duldrums have started to pack their bags and make their way back North!  Spring has paid us a few visits and I have a feeling she will be moving in for good in the next few weeks.  Hallehlujah!  I am almost as allergic to cold weather as I am to excercise.

What better way to ring in Spring's arrival than to celebrate with friends, buy spring treats, or dust off the old get a new warm weather wardrobe?!  I did all three, of course!  The weekend was carefree and fancy-free- delicious meals, bellinis, dancing, scouting out new trends {ie: the illusive cross body satchel...I must be behind?}, and shopping for necessitites.  I'm ready for Spring with a new cloud-like bed and a few things to enjoy when I get out of it.  Hope you're praying for warm weather and all things pink!

A Wednesday Success Story

My little baby dog has made it to the glossy pages of the world wide web! 

Oliver's photo of snow time fun was featured in Garden & Gun's online dog photo contest.  Only a year ago, little Ollie came to us after spending some time on the streets!  Smelly, tear stained, and ready to get "clean", he was instantly on the fast track to stardom!
