Stay Merry and Bright

Le sigh. 
The days following Christmas {when you're forced back into work} are truly the most dismal.  Visions of sugarplums and fireside giggles still dance in my head.  But, alas I am staring at cubicles and looking around for my missing post-it notes. 

But-
I refuse to let the horrible, awful, grinchy work get in the way of my holiday cheer.  It's not over yet...we still have to celebrate the new year!
Keep up your tree and twinkle lights and have a few more cheery days and merry nights!

Christmas is a {Bourbon} Ball!


These little treats are just the thing to take the chill off and get ready for old St. Nick! 

Bon Appetit!
Bourbon Balls
1 (12-oz.) package vanilla wafers, finely crushed
1 cup chopped pecans, toasted
3/4 cup powdered sugar
2 tablespoons unsweetened cocoa
1/2 cup bourbon
2 1/2 tablespoons light corn syrup
Extra Powdered sugar
 
  1. Stir together first 4 ingredients in a large bowl until well blended.
  2. Stir together bourbon and corn syrup until well blended.
  3. Stir together bourbon mixture and wafer mixture.
  4. Shape into 1-inch balls; roll in powdered sugar.
  5. Cover and chill up to 2 weeks
